This is a “dry” sourdough, meaning that it contains more flour than most. These were intended to be able to travel – they could be put in a sack of flour and carried around. However, if yours ends up with a higher water content, I am sure that is fine too.<br /><br />In general, baking this bread takes 24 hours. I usually feed the starter in the morning, mix up a bread dough in the evening, and then bake the bread the next morning. You could begin the process in the evening, then you would finish it the next evening.<br /><br /><em>Feeding your starter:</em><br /><br />This starter lives in the fridge, but it needs to be fed <span style="text-decoration:underline;">at least once/week</span>.<br /><br />Take the starter out of its container and place in a bowl. This is what it looks like right out of the fridge.<br /><br />Add <span style="text-decoration:underline;">one cup</span> of lukewarm water.<br /><br />Mix starter into water (see below).<br /><br />Add <span style="text-decoration:underline;">whole wheat flour</span> to the mixture, enough to make a stiff dough.<br /><br /><span style="text-decoration:underline;">Cover</span> with a damp cloth. Let sit out at room temperature for at least <span style="text-decoration:underline;">8 hours</span>.<br /><br />If you are not going to make bread, place about <span style="text-decoration:underline;">1-2 cups</span> of starter back in your container and place in the fridge (above is what it looks like after about 8-12 hours of growth). On another note: I never wash the container in the fridge and that seems fine.<br /><br />If you are making bread, continue as follows:<br /><br /><em>Making bread:<br /><br /></em>Even when you are making bread, <span style="text-decoration:underline;">do not forget to put 1-2 cups of starter away</span> (see below).<br /><br />Once you have done so, take the rest of your refreshed starter and place in mixing bowl.<br /><br />Add <span style="text-decoration:underline;">3 cups of lukewarm water</span>. Mix.<br /><br />Gradually add <span style="text-decoration:underline;">flour and 1 T salt</span>. I use only white flour at this point, but you can use whatever flour you would prefer. I used to make it with more whole wheat, but it comes out as a denser bread.<br /><br />Add flour until you have a pliable dough. I usually do this entire process in the bowl; you can take it out and knead it a little on a floured surface. This bread, however, requires very little kneading due to the long rising period. This is what my dough looks like.<br /><br />Cover the bowl with a warm damp cloth.<br /><br />Let rise over night or over the course of a day. This is after rising for 8-12 hours.<br /><br /><em>Baking your bread:</em><br />Preheat oven to 450. Place two heavy pots with heavy lids in the oven to warm.<br /><br />Flour a surface (I use a cutting board).<br /><br />Divide your dough into two pieces. I make one slightly larger than the other as the pans I use are of different size.<br /><br />Form dough into loaves. This involves slightly turning the edges in on themselves, essentially forming a crease which you place face-down on the floured surface. You can look this up online.<br /><br />Dust top of each loaf with flour.<br /><br />When oven has pre-heated, place the loaves into the pots and cover them. You should <span style="text-decoration:underline;">flip your loaves over</span> so that the crease that was on the bottom on the floured surface is now on the top in your pan. You can see the crease along the top of the loaves in this photo. This is not necessary,<br />but this is what allows a nice break along the top of the finished bread.<br /><br />Bake <span style="text-decoration:underline;">covered for 30 minutes</span>.<br /><br />After 30 minutes, <span style="text-decoration:underline;">uncover your pans and bake another 10 minutes</span>.<br /><br />When done, remove from the oven and put on a cooling rake or prop bread in their pans as shown here. You need airflow around the loaves to cool well.

If people in the Piscataquis region know me at all, they know me as a writer for local newspapers and magazines. What most folks don’t know is that I grew up without a lot, as did many Mainers in this neck of the woods, and I struggled with poverty off and on for years before finding my financial footing. I’ve even been a welfare recipient, though I’ve tried to pay those funds back, either directly or by paying it forward to other families and organizations in need.
I did not realize until this past two weeks, when friends and family have asked me (because I am known for my research skills) if it was safe to freeze, or how to extend the life of some food item, that I may have acquired some useful skills during my journey. Everyone wants to make their fresh food last and to make as few grocery shopping excursions as possible these days.
In the late 1970s/early 1980s, as stepmom to three growing kids, the book “Putting Food By” taught me how to can vegetables and make pickles. It also features chapters on drying, freezing, and storing in a root cellar, to name a few. It’s an “oldie but a goodie,” and has been updated a few times over the years. Copies are available on eBay and Amazon.
I buy my blueberries and many of my vegetables already frozen. For items I do buy fresh which are not pre-washed, I like to soak in a solution of three parts cool water, one part white vinegar for 15 minutes, rinse, dry and then package for use. I don’t know if vinegar kills COVID-19, but it does have disinfectant properties, and this kind of a wash also helps berries stay fresh longer.
Bananas turn dark faster in the refrigerator, but the insides stay firm and fresh far longer – and when they become too mushy, mash up three and store in the freezer in a small plastic container to thaw for banana bread later! Also, don’t separate bananas (or grapes) until ready to consume, as connection to stems keeps them fresh longer. Celery lasts longer wrapped in tinfoil. Lettuce won’t get soggy as fast if it is stored with a paper towel.
I bought some green and yellow peppers last week for recipes I won’t get to for a while, so those got chopped, pre-measured and stored in small plastic containers in the freezer. It’s important not to leave too much “head room,” the space between the food and the top of the container, when freezing, to reduce the risk of freezer burn. But you do need a little room, or items that expand when frozen could burst out of containers.
People have asked me how to make milk last longer, and eggs. Both can be frozen. Eggs should be removed from shells and frozen in whatever quantity required for various recipes. It’s best to use previously frozen eggs only in recipes that require a lengthy cooking time, in case of any bacteria that might otherwise cause intestinal distress. Thaw them in the fridge, and never re-freeze eggs. And the milk? Just give it a really good shake once it’s thawed. I also freeze the last of a gallon of fresh milk if it’s starting to sour, measured out for future baking needs.
Other items that can be frozen include butter, margarine, shredded cheese, spaghetti sauce, chicken broth, and most stews and casseroles. I have to experiment to find which dishes freeze well. My Italian meatball soup is fine frozen, but my taco bean soup, not so much!
Baked goods can be frozen, as well. Putting a paper towel in with a loaf of bread will keep it from getting soggy as it thaws. Putting a slice of bread in with cookies will keep them softer as they thaw. It’s best to use frozen breads and muffins within 30 days, as the quality begins to degrade after that. Cookies seem to last a little longer. We were still eating my molasses holiday cookies in February.
Apples are another fresh food that does well in the freezer. I slice mine into pie-sized batches and freeze. Or, if I have some that are looking a little worse for wear, I peel, slice and cook on low heat, adding sugar and cinnamon to the applesauce to taste, cool, and freeze.
Our grocery store workers are doing their best to keep the shelves stocked and oft-touched surfaces cleaned. I figure I can do my part by not visiting them any more often than I have to until COVID-19 concerns have passed.

<p>PARKMAN – Everyone is adjusting and learning new ways to move forward during these unusual times. Checkerberry Farm owners Jason and Barbara Kafka are no different. Checkerberry, purchased by the couple in 1981, has added a production greenhouse and several high tunnels to extend this region’s short growing season. Organic produce was sold retail for many years, but grew into a wholesale market over time.</p>
<p>But this month, on-site sales of seedlings is taking place Thursday – Saturday from 9 a.m. to 3 p.m. to replace income normally generated selling to Fedco for their annual spring sale, which was cancelled due to COVID-19.</p>
<p>“Instead of planting one of my big tunnels in May, I have to wait until June to plant because we’ve been setting it up for retail space,” Jason Kafka said.</p>
<p>The virus is not something they take lightly, Kafka said. He sat through Zoom meetings with the Department of Agriculture, representatives from the Maine Organic Farmers and Gardeners Association and other producers to learn best safety practices for his family, his employees, and now, his retail customers.</p>
<p>“We need to keep healthy and be responsible,” he said. “None of us have ever lived through anything like this before. We want to be safe and we are following protocols. We are considered essential, so we can’t take that lightly, either. I went to Etna and got hand sanitizer from Mossy Ledge [Spirits]. I’m now in the process of setting up for retail, and I have to make some signs to remind people about social distancing. Our creativity is being put to the test – that’s the silver lining anyway – learning how to cope with it.”</p>
<p>Some of the farm’s wholesale outlets are seeing “quite a bit more demand,” Kafka said. “I’m not trying to grow more than I have, but I do know outfits that are.” Some of Checkerberry’s employees also work for other outlets, and that extra demand is keeping them away from the farm later into the season than usual. “We’re all feeling that there’s this demand and how do we dance through this,” he said.</p>
<p>One employee was up in Aroostook still, packing potatoes, for an extra week. “We had one prospective employee come by, and he had actually been working at Hannaford down in Belfast. He was done there now, but self-quarantined because one of those hot spots is down there, so there are all these little ripples emanating around. I’d like to have these workers come as soon as possible, but we just have to do it one step at a time to do things properly, so they will be a little delay here. I’ve learned over the years that the ground will only warm up so fast. There’s some stuff I’d like to get done, but if it’s a week later, that’s okay and the ground will just be a little bit warmer.”</p>
<p>To everything there is a season, and now it’s time to plant and help produce grow. Kafka is confident that his markets will be ready when the harvest comes. “We’ve been established with these outlets for a good long time,” he said.</p>
<p>Asked by Barbara what he wanted for his birthday on May 20, Kafka replied, “I’d like to have my onions in the ground. That’s kind of my target date. But things are still up in the air so much, I’m just trying to work smart.”</p>
<p>Social distancing with employees out in the fields is not difficult, but, “working in our production greenhouse, it is harder,” said Kafka. “We are learning new habits. Here in Piscataquis County, away from the hubbub of it all, we’ve had a bit more time to just mentally get a grasp of what we need to do and make those new habits.”</p>
<p>While Kafka said maybe it’s been overstated, “we are all in this together. One of our customers that came up on Saturday from Freeport commented on a farm down the road where she has always gotten her milk, but she hadn’t realized she could get cuts of meat and eggs there. So there’s a silver lining to all of this, and hopefully, people realize the importance of buying things locally. We’re all benefitting. The smaller the circle of our money exchanges, paying a local somebody for products or services, that money stays in the community. So utilize our local farms and stores – and local newspapers, too!”</p>

<p>DEXTER/DOVER-FOXCROFT – As much as COVID-19 has complicated everyone’s lives, it has boosted business for certain niche industries, including local farmers markets.</p>
<p>“Sales have been up from last year and we’ve seen a bunch of new customers,” said Mary Hoskins, owner of Cedar Hill Farm, about the Dexter Farmers Market. “I’m pretty sure some of it is pandemic related because we have had comments from customers about enjoying shopping outside and helping local farmers. We moved to a more visible location this year so that has had an effect, also.”</p>
<p>Gretchen Huettner, owner of Farm in the Woods, said that the Dover Cove Farmers Market is also doing well this spring. “We have been extremely surprised at the outpouring of support from our customers, and the number of new customers we have been seeing,” she said.</p>
<p>The number of people coming through the market has increased significantly, and for many vendors, sales figures are also up this season. “We had one vendor who said their opening day sales were more than double a typical Memorial Day weekend, and many of our vendors don’t have much remaining product at the end of the day,” Huettner said. “We are optimistic that this will bode for a wonderful summer for customers and vendors alike. Many of our vendors are making plans to increase their production and product offerings, as well. For those that grow produce, the season is off to a complicated start, but we are optimistic that by early July things will be looking really good.”</p>
<p>Farmers markets were deemed essential able to open as seemed prudent throughout the pandemic. The Dexter Farmers Market runs summers only and has seen no changes to its schedule. This year, the market moved to 445 Corinna Road, just past Brooks Tire. There are two regular vendors, “but several others attend as guests and we are always looking for more farmers to join us,” Hoskins said. The market runs from noon to 3 p.m. on Saturdays through mid-October.</p>
<p>The Dover Cove Farmers Market runs from Memorial Day weekend through the last Saturday in October on South Street near the Piscataquis Chamber of Commerce from 9 a.m. to 1 p.m. The weekend before Thanksgiving, the market reopens in the basement of the Thompson Free Library every other Saturday through the end of April – usually.</p>
<p>“We decided in March to close the winter market six weeks early,” Huettner said. “When we were faced with the unknown, it just seemed to make sense. Our market for March 14 was poorly attended, and we had four vendors for the winter, and every household had at-risk members.”</p>
<p>Both markets are taking steps to keep vendors and customers safe. “Vendors wear masks and we provide plenty of hand sanitizer and alcohol sprays for wiping surfaces,” said Hoskins. “We want our customers to feel comfortable and welcome.”</p>
<p>At Dover Cove, efforts to create more spacing were implemented. “Having traffic cones has helped us with distancing, and I feel like the parking lot is safer as a result, because cars seem to be slower pulling in and parking, so that is an added bonus,” said Huettner. Dover Cove customers may also preorder through individual vendors or the market’s Facebook page for minimal-contact shopping.</p>
<p>“We discussed many different things, but decided that supplying hand sanitizer and ample spacing for everyone would be some of the wisest precautions we could take,” she said. “Many of the vendors wear masks when they deem it necessary when dealing with customers, but we have respected everyone’s personal situations. We heavily discussed many of the other suggested precautions and decided that we really needed to leave it up to vendors on how they wanted to deal with their product and money.”</p>
<p>Their position, Huettner said, is that, “we are outside and most of us have tables in our booths that help us maintain distance between customers. According to the University of Maine and other sources COVID-19 has no links to or evidence of being spread through food so we felt comfortable with our choices for the market.”</p>
<p>On June 13, Dover Cove offered free masks to customers, courtesy of a “friend of the market” who sewed and donated an entire box of face coverings. “We were so thankful and happy to see people utilizing the resource if they needed them,” Huettner said. “This is a community effort and we are thankful for all of the support we have seen this season. We all love the market and in deciding what to do this summer, we didn’t want to lose that precious sense of community.”</p>
<p>Both the Dexter and Dover markets participate in the Maine Harvest Bucks program, which allows customers paying with EBT to collect matching “bucks” to spend on fruits and vegetables. Dover Cove has a few Frequent Buyer Cards left, which award shoppers $10 in Harvest Bucks after shopping at the market four times. Huettner said several vendors also accept WIC vouchers.</p>
<p>There are five regular vendors at Dover Cove. “Our vendor numbers for the summer are actually up,” said Huettner. “We have several guest vendors that have participated because their normal marketing options are closed. We had My Three Leaves join us late last year, and Maison de Chevre is new this season. We are trying to figure out how we can safely accommodate more vendors if they would like to participate, which is a wonderful problem to have!”</p>
<p>Dover Cove was given a break on fees this year due to the pandemic. “We have talked about moving because the $350 vendor’s fee from the town has been difficult to cover most years due to the fluctuations in vendor numbers and our other expenses,” said Huettner. “Our budget is pretty bare bones and many times vendors cover additional things because of that. This year we have been so grateful to the town for only charging us half of the normal fee, and we are hoping that if things can continue on the current trajectory it will mean that we are much more financially stable going into the future. It was a simple act of kindness on the town’s behalf, when we faced the unknown, that is making a huge difference for us this year.” </p>
Dover Cove is missing the 4H Passport Program, which has been put on hold this summer. “We are hopeful that families will still come,” Huettner said. The program offered Veggie Vouchers to kids, sponsored by the Piscataquis Regional Food Center, the Piscataquis County Cooperative Extension Executive Committee, and Farm in the Woods. Organizers are trying to figure out how to offer Veggie Vouchers as a Dover Cove program this year, “in hopes that it will help us maintain the participation of local families at market. We all love to see the kids and the thought that goes into their shopping,” she said.

<p style="margin-bottom:0in;line-height:100%;">Patty: I was just telling my husband how strange it feels not to go to the fair this year. We are both 73 and been going now for 50 years.</p>
<p style="margin-bottom:0in;line-height:100%;">Ashley: The truck pulls and food. My kiddo would have been tall enough this year for rides too I think so that stinks. The fair is my favorite.</p>
<p style="margin-bottom:0in;line-height:100%;">Maaf: I miss everything! Good luck next year Maine fairs!!</p>

The Center Theatre and Piscataquis Chamber of Commerce in Dover-Foxcroft have announced that the Maine Whoopie Pie Festival will not be taking place as planned on October 3rd. Instead, the Festival is being envisioned as a month-long virtual celebration dubbed ‘WHOOPtoberfest’ featuring a new portal on MaineWhoopiePieFestival.com. The portal will let visitors receive real-time directions to the nearest whoopie pie bakers and vendors to ensure easy access to Maine’s Official State Treat. Members of the WHOOPtoberfest portal will be able to vote for their favorite bakers, upload images of their favorite whoopie pie moments, and earn badges and prizes as true fans of the Maine Whoopie Pie.<br /><br />“We’re very disappointed that we can’t have the festival as planned,” Said Patrick Myers, the Executive Director of the Center Theatre and lead organizer of the Festival, ‘But there is no way to safely bring 7,000 people from around New England to central Maine this fall. However, we do not want 2020 to be known as ‘The Year Without Whoopie’ so we’re excited to host a month-long celebration of our state’s whoopie pie bakers, vendors, and supporters.” The WHOOPtoberfest portal is in development, but Myers said he plans to start working with the state’s bakers and festival sponsors to create promotions and special offers that will roll out throughout the month of October.<br /><br />The Maine Whoopie Pie Festival began 11 years ago and has grown to be the largest one-day event in Piscataquis County. Denise Buzzelli, the Executive Director of the Piscataquis Chamber of Commerce, has been a collaborator on the festival for most of its existence. “The Whoopie Pie Festival is a huge boost to our local economy,” Buzzelli said, “Losing the in-person festival will affect many of our local businesses and organizations, but we hope that WHOOPtoberfest will keep the spirit of the festival alive until we can come together again in 2021.”<br /><br />The Maine Whoopie Pie Festival is a collaboration between the Center Theatre, Piscataquis Chamber of Commerce, and many other businesses and organizations including the Festival’s Lead sponsor Shaw’s Supermarket, and other sponsors: Consolidated Communications, Dave’s World, the Eastern Gazette, Maine’s Credit Unions, Townsquare Media, and the Varney Agency. <p><span style="font-weight:400;"> <span class="rcg-copy part-1">SANGERVILLE — The tradition of farming and the opportunities of the internet are being celebrated by</span> the farmers of the East Sangerville Grange, as they announce the opening of their online farmers’ market — the Maine Highlands Farmers’ Market. When the COVID-19 pandemic required social distancing and people began to limit their in-person shopping trips, the East Sangerville Grange farmers began to problem-solve solutions to make their locally sourced produce and products available to the public in a safe, efficient manner.<br /><br /></span><span style="font-weight:400;">Over many weeks, the Grange farmers met regularly on Zoom to discuss the possibilities. It quickly became clear that an internet-based farmers’ market would offer customers the ability to remain safely at home while shopping “at” a variety of farms in an online market. The customers would be able to support local farms, while the farmers would be able to </span><span style="font-weight:400;"><span class="rcg-copy part-1"></span>provide much-needed, locally produced items to the public. And thus, with the full support of the East Sangerville Grange members, the online Maine Highlands Farmers’ Market was created.<br /><br /></span><span style="font-weight:400;">The market had a successful soft opening on the weekend of July 11-12, with the help of their fellow Grange members as their first customers. Now the online market is opening to the general public at </span><a href="http://mainehighlandsfarmersmarket.com/"><span style="font-weight:400;">mainehighlandsfarmersmarket.com</span></a><span style="font-weight:400;">, where customers can explore the offerings of several local farm vendors. Brooke Isham, from Lomah LLC, one of the participating farms said, “Products will range from fresh seasonal fruits and vegetables, to meats, honey, cheeses and soaps. Our farmers will update their individual pages on the Market website as products become available.”<br /><br /></span><span style="font-weight:400;">Isham noted, “Shoppers will be able to add items to their cart from one, two or all the market farms in the same way they would buy items at a traditional farmers’ market, but now they can shop from home.”<br /><br /></span><span style="font-weight:400;">Customers will be able to browse the various farm pages on the market website during the week. Orders will be allowed from 8 a.m. on Saturday through Sunday at 8 p.m., with payments completed on the website through Paypal. </span><span style="font-weight:400;">Customers will be able pick up their orders, using their reusable shopping bags, at the American Legion Hall in Dover-Foxcroft on Tuesdays between 4 and 6 p.m.<br /><br /></span><span style="font-weight:400;">The farmers of old may not have dreamt of something like the online Maine Highlands Farmers’ Market, but they’d certainly appreciate the effort to provide the community a safe, convenient method of buying food and products from a wide range of local farms. Now the local shopper can visit several local farms from across the region within minutes and buy a variety of items from the comfort of the family couch.</span></p>
